  1. Prepare Vegetables: Dice zucchini, chop onion and red bell pepper, and mince garlic.
  2. Sauté Aromatics: Heat olive oil in a skillet over medium heat; cook onion until softened. Add garlic and bell pepper; sauté until fragrant.
  3. Incorporate Rice: Stir in uncooked rice to coat with oil and flavors.
  4. Add Tomatoes and Seasonings: Pour in diced tomatoes and vegetable broth; stir in oregano, basil, salt, and pepper.
  5. Simmer: Bring to a boil; reduce heat to low. Cover and simmer for 20-25 minutes.
  6. Add Zucchini: Stir in zucchini; cover again and simmer for an additional 5-7 minutes.
  7. Add Cheese: Remove from heat; mix in Parmesan until melted.
  8. Rest: Let sit for 5 minutes before serving.
  9. Serve: Garnish with parsley and additional cheese if desired.
