  • 4 cups vegetable broth
  • 1 ½ pounds Yukon Gold potatoes, peeled and cubed
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1 cup unsweetened almond milk (or other plant-based milk)
  • 2 tablespoons nutritional yeast

  1. In a large pot over medium heat, sauté the chopped onion in olive oil until soft (5-7 minutes).
  2. Add minced garlic and cook for an additional minute.
  3. Pour in vegetable broth and add cubed Yukon Gold potatoes.
  4. Stir in dried thyme, rosemary, smoked paprika, salt, and pepper.
  5. Bring to a boil; then reduce heat and simmer covered for 15-20 minutes until potatoes are tender.
  6. Blend the soup until smooth using an immersion blender or by transferring it to a blender.
  7. Return the blended soup to the pot and stir in almond milk and nutritional yeast.
  8. Heat gently over low heat until warmed through. Adjust seasoning as needed.
