  • Nutritional yeast

  1. Heat olive oil in a large pot over medium heat. Add chopped onion; sauté until softened (5-7 minutes).
  2. Stir in minced garlic; cook for 1 minute until fragrant.
  3. Add vegetable broth and cubed Yukon Gold potatoes; bring to a boil.
  4. Season with thyme, rosemary, smoked paprika, salt, and pepper. Reduce heat; simmer for 15-20 minutes until potatoes are tender.
  5. Blend the soup until smooth using an immersion blender or regular blender in batches.
  6. Return the blended soup to the pot over low heat; stir in almond milk and nutritional yeast.
  7. Heat through gently without boiling; adjust seasonings as desired.
  8. Serve hot with your choice of toppings!
