  • 1 cup panko breadcrumbs
  • Fresh parsley and green onions for garnish

  1. Sauté chopped onion in olive oil until translucent. Add minced garlic and cook for an additional minute.
  2. Stir in cubed potatoes, broth, herbs, and spices. Bring to a boil, then reduce heat and simmer until fork-tender (about 20–25 minutes).
  3. Mash the softened potatoes to desired consistency.
  4. Blend soaked cashews with plant-based milk and seasonings until smooth. Combine with mashed potatoes.
  5. Transfer mixture to a greased baking dish and add panko topping.
  6. Bake at 375°F (190°C) for 25–30 minutes until golden brown.
  7. Let rest before serving; garnish with parsley and green onions.
