  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Peel, core, and slice apples into half-inch pieces.
  3. In a large bowl, combine granulated sugar, flour, cinnamon, nutmeg, and cloves. Toss in sliced apples with lemon juice and vanilla extract.
  4. Transfer the apple mixture to the prepared baking dish and dot with butter.
  5. In another bowl, mix oats, flour, brown sugar, granulated sugar, cinnamon, nutmeg, and salt. Cut in cold butter until crumbly.
  6. Sprinkle the oat topping over the apples and bake for 45 to 60 minutes until golden brown.
  7. Allow resting for 15–20 minutes before serving.
