Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
Peel, core, and slice the apples into ½-inch pieces. In a bowl, mix apples with sugar, flour, spices, lemon juice, and vanilla extract until well-coated.
Transfer the apple mixture to the prepared baking dish and dot with butter.
For the topping, combine oats, flour, brown sugar, granulated sugar, spices, and salt in another bowl. Cut in cold butter until crumbly.
Sprinkle topping over the apples and bake for 45-60 minutes until golden brown and bubbly.
