  • ½ cup buttermilk (or homemade alternative)

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking soda, cinnamon, and salt. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then stir in vanilla and mashed bananas.
  3. Alternate adding dry ingredients and buttermilk to the banana mixture until just combined.
  4. Divide batter between prepared pans and bake for 28-32 minutes or until golden brown.
  5. Let cakes cool before frosting with cream cheese frosting made by beating softened cream cheese and butter until fluffy, then adding powdered sugar.
