  • 1 can (10 ounces) diced tomatoes and green chilies
  • 1 tablespoon chili powder
  • 2 cups beef broth
  • 1 package (12 ounces) ramen noodles (flavor packet reserved)
  • Toppings: shredded cheddar cheese, sour cream, chopped cilantro

  1. In a large skillet over medium-high heat, brown the ground beef and drain excess grease.
  2. Add chopped onion and sauté until softened. Stir in minced garlic for one minute.
  3. Mix in both cans of diced tomatoes and spices; bring to a simmer.
  4. Reduce heat and let simmer for at least 15 minutes.
  5. In another saucepan, boil beef broth and cook ramen noodles according to package instructions.
  6. Combine cooked noodles with the taco mixture and stir in the reserved ramen flavor packet.
  7. Serve topped with cheese, sour cream, cilantro, and any additional toppings you desire.
