  • 1 (15 oz) can corn, drained
  • 1 pound pasta (rotini, penne, or shells)
  • 1 cup shredded cheddar cheese

  1. In a large pot over medium-high heat, brown the ground beef while breaking it apart. Drain excess grease.
  2. Add chopped onion and sauté until softened (about 5-7 minutes).
  3. Stir in taco seasoning and cook for another minute to unlock flavors.
  4. Pour in tomato sauce and diced tomatoes; mix well.
  5. Add beef broth and stir to combine.
  6. Incorporate black beans and corn into the mixture.
  7. Add pasta, ensuring it's submerged in the liquid; add more broth if necessary.
  8. Bring to a boil; then reduce heat to low, cover, and simmer for about 15-20 minutes until pasta is cooked through.
  9. Remove from heat and stir in shredded cheddar until melted.
  10. Serve hot with desired toppings like sour cream, avocado, cilantro, or green onions.
