  • 1/4 cup low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1/2 cup sweet chili sauce
  • Cooked rice (white, brown, or jasmine)
  • Broccoli florets, red bell pepper, shredded carrots

  1. Marinate chicken cubes in cornstarch, soy sauce, rice vinegar, sesame oil, garlic powder, ground ginger, and optional red pepper flakes for at least 15 minutes.
  2. Heat vegetable oil in a skillet over medium-high heat; cook marinated chicken until golden brown (about 5-7 minutes).
  3. Remove chicken; stir together sauce ingredients in the same skillet. Simmer for a few minutes until thickened.
  4. Return chicken to the skillet and coat in sauce; heat through.
  5. Serve over cooked rice with broccoli florets, bell peppers, and carrots arranged around the chicken. Garnish with green onions, cilantro, and sesame seeds.
