  • 1 cup erythritol (or preferred sugar-free sweetener)
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon sea salt
  • Optional: 1/4 teaspoon xanthan gum

  1. In a medium saucepan, combine heavy cream and almond milk.
  2. Add erythritol and sea salt; stir over medium heat until sweetener dissolves (about 5-7 minutes).
  3. Remove from heat, stir in vanilla extract, and whisk in xanthan gum if using.
  4. Cool at room temperature, then refrigerate for at least 4 hours or overnight.
  5. Prepare your ice cream maker according to manufacturer instructions.
  6. Pour the chilled base into the frozen bowl of the ice cream maker and churn for 20-30 minutes until soft-serve consistency.
  7. Transfer to a freezer-safe container and freeze for 2-3 hours or longer before serving.
