  • 6 large bell peppers
  • 1 tablespoon olive oil
  • 1 large onion
  • 2 cloves garlic
  • 1 pound ground beef (or turkey)
  • 1 cup cooked rice (or quinoa)
  • 1/2 cup crumbled feta cheese
  • 1 can crushed tomatoes
  • Salt and pepper

  1. Preheat the oven to 375°F (190°C). Wash and prepare the bell peppers by slicing off the tops and removing seeds.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion until softened, then add minced garlic.
  3. Add ground beef (or turkey) to the skillet and cook until browned. Drain excess grease.
  4. Stir in oregano, basil, crushed tomatoes, salt, and pepper; let simmer for about 10 minutes.
  5. Combine cooked rice (or quinoa), feta cheese, and parsley into the meat mixture.
  6. Stuff each pepper with the filling mix and place them upright in a baking dish with broth at the bottom.
  7. Cover with foil and bake for 45 minutes; uncover and bake for an additional 15–20 minutes until peppers are tender.
