  • 1 green bell pepper, chopped
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans
  • Taco seasoning
  • Shredded cheddar cheese
  • Olive oil, salt, and pepper

  3. Wash and pierce the potatoes with a fork; rub with olive oil, salt, and pepper.
  4. Place potatoes on the oven rack and bake for 60-75 minutes until tender.
  5. In a skillet, brown the ground beef over medium-high heat; drain excess fat.
  6. Add onion and green bell pepper; sauté until softened.
  7. Stir in diced tomatoes, kidney beans, and taco seasoning; simmer for 10 minutes.
  8. Fluff baked potatoes and cut a slit on top; stuff generously with filling.
  9. Top with cheese and return to the oven until melted.
  10. Serve warm with optional garnishes.
