  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (1 ounce) package taco seasoning
  • 1/2 cup shredded cheddar cheese
  • Optional: Sour cream and chopped green onions for garnish

  1. Preheat your oven to 400°F (200°C).
  2. Wash the russet potatoes thoroughly and pierce them several times with a fork. Rub them with olive oil, salt, and pepper.
  3. Bake the potatoes directly on the oven rack for about 60-75 minutes until fork-tender.
  4. In a skillet over medium-high heat, cook ground beef until browned. Drain excess grease.
  5. Add chopped onion and bell pepper; cook until softened (about 5-7 minutes).
  6. Stir in diced tomatoes, kidney beans, and taco seasoning. Simmer for about 10 minutes.
  7. Cut a lengthwise slit in each potato and fluff the insides with a fork.
  8. Spoon the beef mixture into each potato and top with cheddar cheese. Return to the oven for another 5-10 minutes until melted.
  9. Cool slightly before serving; garnish if desired.
