  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup strawberry jam or preserves
  • 1 cup powdered sugar

  1. Prepare the dough by whisking together flour, baking soda, baking powder, and salt in one bowl. In another bowl, cream softened butter and granulated sugar until fluffy. Beat in eggs and vanilla extract. Gradually mix in dry ingredients.
  2. Chill the dough by dividing it into two disks wrapped in plastic wrap; refrigerate for at least an hour.
  3. Preheat the oven to 375°F (190°C). Roll out one disk on a floured surface to about a quarter-inch thick. Cut into rectangles.
  4. Assemble by placing half of the rectangles on parchment-lined sheets, adding about a teaspoon of strawberry jam on top, then covering with remaining rectangles cut with slits.
  5. Bake for 10-12 minutes or until golden around the edges. Let cool before glazing.
