Thoroughly wash and dry the apples, then insert wooden sticks into the stem end.
In a heavy-bottomed saucepan, combine sugar, corn syrup, and water. Heat over medium-high until boiling without stirring. Cook until the thermometer reads 300°F to 305°F.
Remove from heat and stir in vanilla extract and food coloring if desired.
Dip each apple into the candy mixture, allowing excess to drip off before placing on parchment paper. Add toppings while still wet.
Cool completely until hardened (30-60 minutes) before enjoying.
