  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1/2 cup vegetable broth
  • 10 ounces fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • Optional: 1/4 cup heavy cream or half-and-half

  1. Heat olive oil in a large pot over medium heat. Add garlic and red pepper flakes; sauté until fragrant.
  2. Stir in crushed tomatoes, tomato sauce, vegetable broth, oregano, basil, salt, and pepper. Simmer for 15-30 minutes.
  3. Cook pasta according to package directions until al dente; reserve 1 cup of pasta water before draining.
  4. Add chopped spinach to the sauce and stir until wilted.
  5. Combine cooked pasta with the sauce; add reserved water as needed for consistency.
  6. Stir in Parmesan cheese until melted and creamy.
