  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 10 ounces fresh spinach, washed and roughly chopped
  • 1/2 cup vegetable broth
  • Salt and freshly ground black pepper to taste
  • Optional: 1/2 cup grated Parmesan cheese

  1. Heat olive oil in a large pot over medium heat. Sauté minced garlic for 30 seconds until fragrant.
  2. Add crushed tomatoes, tomato sauce, vegetable broth, oregano, basil, salt, and pepper. Simmer for 15-30 minutes.
  3. While sauce simmers, cook pasta according to package directions in salted water until al dente; reserve 1 cup of pasta water before draining.
  4. Stir in chopped spinach into the sauce until wilted (about 1-2 minutes).
  5. Combine drained pasta with the sauce and spinach, tossing everything together. Add reserved pasta water if needed for consistency.
  6. Stir in grated Parmesan cheese (if using), taste for seasoning, and serve immediately.
