  • Heavy cream

  1. Heat olive oil in a large pot over medium heat. Season chicken breasts with salt and pepper, sear until golden brown (4-6 minutes per side). Remove and shred once cooled.
  2. In the same pot, sauté diced onion until soft. Add minced garlic and diced jalapeños; cook for 2-3 minutes until fragrant.
  3. Stir in ground cumin and paprika; cook for 1 minute.
  4. Pour in chicken broth and scrape up any browned bits. Bring to a gentle boil, then reduce heat to simmer for 15-20 minutes.
  5. Lower heat again and whisk in cream cheese until smooth, then add heavy cream and shredded cheddar until melted.
  6. Return shredded chicken to the pot, season with salt and pepper as needed, and heat through for another 3-5 minutes.
  7. Serve hot, garnished with crumbled beef bacon and fresh cilantro.
