Ingredients

  • Cold unsalted butter
  • Libby's Pumpkin Puree
  • Granulated sugar
  • Light brown sugar
  • Egg yolks
  • Vanilla extract
  • All-purpose flour
  • Pumpkin spice
  • Baking soda
  • Fine sea salt
  • Finely chopped chocolate bar or chocolate chips

Instructions

  1. Whisk together flour, pumpkin spice, baking soda, and salt in a medium bowl.
  2. In a large bowl, cream cold butter with granulated and brown sugars until light and fluffy.
  3. Beat in egg yolks and vanilla; mix in pumpkin puree gently.
  4. Gradually fold in dry ingredients until just combined; then add chocolate chips.
  5. Chill dough for at least 30 minutes (recommended).
  6. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  7. Scoop dough onto prepared sheets about two inches apart; press extra chocolate chips on top if desired.
  8. Bake for 10-12 minutes until edges are set but centers remain soft.
  9. Cool on sheets for five minutes before transferring to a wire rack.
