Instructions

  1. Trim silver skin from the beef tenderloin and pat dry.
  2. Mix salt, pepper, garlic powder, onion powder, thyme, and rosemary; rub onto the meat.
  3. Sear the beef in olive oil over medium-high heat until browned on all sides (about 2-3 minutes each side).
  4. Sauté onions, carrots, and celery in the same skillet until softened (5-7 minutes).
  5. Place vegetables in the slow cooker; whisk together chicken broth, apple cider vinegar, Dijon mustard, and minced garlic; pour over veggies.
  6. Add seared beef on top; cover and cook on low for 3-4 hours until internal temperature reaches 145°F (63°C).
  7. Let rest before slicing and serve with sauce.
