  • 1 (2-3 pound) beef tenderloin
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup chicken broth
  • 1/2 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 medium onion, sliced
  • 2 carrots, chopped
  • 2 celery stalks, chopped

Instructions

  1. Trim silver skin from beef tenderloin and pat dry. Mix salt, pepper, garlic powder, thyme, and rosemary; rub on beef.
  2. Heat olive oil in a skillet over medium-high heat. Sear each side of the tenderloin for 2-3 minutes until browned.
  3. In the same skillet, sauté onions, carrots, and celery for about 5 minutes until soft.
  4. Whisk together chicken broth, apple cider vinegar, Dijon mustard, and minced garlic in a bowl.
  5. Place sautéed vegetables in the slow cooker, add sauce mixture on top, then place seared beef over it.
  6. Cover and cook on low for 3-4 hours until internal temperature reaches 145°F (63°C).
  7. Let rest for 10-15 minutes before slicing against the grain.
