  • 1 cup frozen peas
  • 1 cup frozen corn

  3. Chop onion, carrots, celery, and cube Yukon gold potatoes; mince garlic.
  4. In a skillet over medium-high heat, heat olive oil and sear chicken pieces until browned; set aside.
  5. Sauté onions, carrots, and celery in the same skillet for 5-7 minutes; add minced garlic and cook until fragrant.
  6. Transfer sautéed veggies to slow cooker; add seared chicken, chicken broth, diced tomatoes (with juice), cubed potatoes, thyme, rosemary, salt, and pepper.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  8. During the last half hour of cooking, add frozen peas and corn.
  9. For optional thickening, mix flour with cold water to create a slurry; stir into stew during the final minutes of cooking.
  10. Adjust seasoning before serving; garnish with fresh parsley.
