  • 4 beef chops (bone-in or boneless)
  • 1.5 lbs Yukon Gold or red potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and black pepper
  • Preparation:

Instructions

  1. Preheat oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. Dice potatoes into 1-inch pieces and toss with olive oil, garlic powder, paprika, rosemary, thyme, salt, and pepper in a large bowl.
  3. Pat the beef chops dry and rub them with a mixture of olive oil, melted butter, garlic powder, paprika, rosemary, thyme, salt, and pepper.
  4. Spread the seasoned potatoes on the sheet pan and roast for 15-20 minutes.
  5. Add the beef chops to the pan and continue roasting for another 10-15 minutes until cooked through.
  6. Let the meat rest briefly before serving.
