Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
Dice the potatoes into uniform 1-inch pieces and toss them in a bowl with 1 tablespoon of olive oil and half of the seasonings (garlic powder, paprika, rosemary, thyme, salt, pepper).
Pat the beef chops dry and rub them with a mixture made from the remaining olive oil, melted butter, and spices.
Spread the seasoned potatoes on the prepared sheet pan and roast for 15-20 minutes.
Add beef chops to the pan after the initial roast; continue cooking for another 10-15 minutes until the beef reaches an internal temperature of 145°F (63°C).
Let rest for a few minutes before serving with fresh herbs and lemon wedges if desired.
