  • 1 pound Italian sausage (sweet or hot)
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 can diced tomatoes (14.5 ounces)
  • 1 can cannellini beans (15 ounces)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 9 ounces fresh cheese tortellini
  • 5 ounces fresh spinach, roughly chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage, breaking it up as it cooks until browned (about 7-10 minutes). Remove from pot.
  2. In the same pot, sauté chopped onion for 5-7 minutes until soft. Add garlic and cook for an additional minute.
  3. Pour in chicken broth and diced tomatoes; stir in cannellini beans, oregano, and basil. Return sausage to the pot.
  4. Simmer uncovered for at least 15 minutes to meld flavors. Season with salt and pepper to taste.
  5. Add tortellini and cook according to package instructions (3-5 minutes). Stir in spinach until wilted (1-2 minutes).
  6. Adjust seasoning if needed before serving.
