  • 1 pound Italian sausage (or turkey/chicken sausage)
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 9 ounces fresh cheese tortellini
  • 5 ounces fresh spinach, roughly chopped
  • Salt and pepper to taste
  • Preparation:

Instructions

  1. Brown the sausage in olive oil over medium heat until fully cooked. Remove and set aside.
  2. In the same pot, sauté onion for about 5-7 minutes until softened; add garlic for another minute.
  3. Stir in chicken broth, diced tomatoes, beans, oregano, basil, and browned sausage. Simmer for 15-30 minutes.
  4. Add tortellini according to package instructions (3-5 minutes), then stir in spinach until wilted.
  5. Season with salt and pepper as needed and serve hot.
