1 pound Italian sausage (sweet or hot, removed from casings)
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
8 cups chicken broth
1 (14.5 ounce) can diced tomatoes, undrained
1 (15 ounce) can cannellini beans, rinsed and drained
1 teaspoon dried oregano
1/2 teaspoon dried basil
9 ounces fresh cheese tortellini
5 ounces fresh spinach, roughly chopped

In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned (about 7-10 minutes). Remove and set aside.
In the same pot, sauté onion until softened (5-7 minutes), then add garlic and cook for another minute.
Pour in chicken broth and diced tomatoes; add cannellini beans, oregano, basil, and browned sausage back to the pot. Simmer for at least 15 minutes.
Add tortellini and spinach; cook according to package instructions (3-5 minutes).
Season with salt and pepper to taste before serving.

Feel free to incorporate other vegetables like zucchini or carrots for added nutrition. For a vegetarian option, substitute sausage with chickpeas or lentils.
