  • 2 tablespoons olive oil
  • 1 pound chicken sausage (or turkey sausage), removed from casings
  • 1 red onion, thinly sliced
  • 4 cloves garlic, minced
  • 6 ounces feta cheese, crumbled
  • 1/4 cup honey, plus more for drizzling
  • Fresh basil leaves, chopped

  1. Activate the yeast by dissolving sugar and yeast in warm water; let stand until foamy (5-10 minutes).
  2. Mix in olive oil, then gradually add flour and salt until a shaggy dough forms.
  3. Knead on a floured surface for 8-10 minutes until smooth and elastic.
  4. Place in an oiled bowl, cover, and let rise until doubled (about 1-1.5 hours).
  5. Cook the sausage in a skillet until browned; add onions and sauté until soft.
  6. Stir in garlic; cook for another minute.
  7. Preheat the oven to 450°F (232°C) and prepare your pizza stone if using.
  8. Roll out dough into a circle; transfer to parchment paper or cornmeal-dusted peel.
  9. Brush with olive oil, layer sausage mixture, sprinkle feta, and drizzle with honey.
  10. Bake for about 12-15 minutes until golden brown.
  11. Garnish with fresh basil and additional honey if desired before slicing.
