  • 2 lbs boneless, skinless chicken breasts
  • 1 large red onion, finely diced
  • 2 green bell peppers, finely diced
  • 2 red bell peppers, finely diced
  • 1 yellow bell pepper, finely diced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 bunch cilantro, chopped
  • Juice of 4 limes
  • 1/4 cup olive oil
  • 2 tablespoons white vinegar

  1. Cook chicken by poaching or grilling until tender and fully cooked (165°F). Let cool and shred.
  2. Dice the veggies: red onion and all bell peppers; rinse black beans and corn.
  3. In a bowl, combine shredded chicken with diced vegetables and cilantro.
  4. Whisk together lime juice, olive oil, vinegar, cumin, chili powder, garlic powder; season with salt and pepper.
  5. Pour dressing over the chicken mixture; toss to coat evenly.
  6. Chill for at least 30 minutes before serving to enhance flavors.
