  • 2 lbs boneless, skinless chicken breasts
  • 1 large red onion
  • 2 green bell peppers
  • 2 red bell peppers
  • 1 yellow bell pepper
  • 1 (15-ounce) can black beans
  • 1 (15-ounce) can corn
  • 1 bunch cilantro
  • For the dressing: juice of 4 limes, 1/4 cup olive oil, 2 tablespoons white vinegar, spices
  • Instructions:

  1. Cook the chicken by simmering in water with spices until tender. Let it cool.
  2. Chop the red onion and bell peppers while the chicken cools.
  3. Shred the cooled chicken into bite-sized pieces.
  4. In a bowl, whisk together lime juice, olive oil, white vinegar, cumin, chili powder, garlic powder, and optional cayenne pepper.
  5. In a large bowl, combine shredded chicken, diced vegetables, black beans, corn, and cilantro.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Chill in the refrigerator for at least 30 minutes to enhance flavors before serving.
