  • 3 tbsp unsalted butter
  • 3 tbsp vegetable oil
  • 1 medium onion
  • 15-ounce can tomato sauce
  • 2 cups heavy cream
  • Various spices (cumin, coriander, turmeric, garam masala)
  • Fresh cilantro (optional for garnish)

  1. Marinate chicken in Greek yogurt, spices, and lemon juice for at least 30 minutes.
  2. Sauté onions and garlic in butter and oil until soft; add spices and cook briefly.
  3. Stir in tomato sauce and cashews; simmer gently for about 15-20 minutes.
  4. Blend the sauce until smooth; return to heat.
  5. Cook marinated chicken separately until browned; then combine with sauce.
  6. Stir in heavy cream and crushed fenugreek leaves; simmer for 5-10 minutes.
  7. Let rest before serving garnished with cilantro alongside rice or naan.
