  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 15 ounces pumpkin puree
  • 14.5 ounces diced tomatoes (undrained)
  • 1 cup vegetable broth
  • 1 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/2 cup heavy cream or coconut cream
  • 1/4 cup grated Parmesan cheese
  • Optional protein: cooked chicken, turkey, or sautéed mushrooms

  1. Heat olive oil in a large saucepan over medium heat. Sauté onions until softened (5-7 minutes).
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in pumpkin puree; cook for about 2 minutes to blend flavors.
  4. Add diced tomatoes, vegetable broth, sage, thyme, salt, and pepper; bring to a simmer for 15-20 minutes.
  5. Stir in cream and Parmesan cheese until melted and smooth.
  6. Cook pasta according to package directions until al dente; drain and combine with sauce.
  7. If desired, mix in any optional proteins before serving.
  8. Garnish with fresh parsley and extra Parmesan cheese.
