  • 1/2 cup graham cracker crumbs
  • 1/3 cup white chocolate chips

  1. Beat cream cheese until fluffy. Mix in pumpkin puree, sweetened condensed milk, and pumpkin pie spice until smooth.
  2. Gently fold in graham cracker crumbs until combined.
  3. Chill mixture for at least 4 hours or overnight.
  4. Roll mixture into balls (about 1.5 tablespoons each) and chill again for another 30 minutes.
  5. Melt white chocolate chips and dip each truffle until fully coated.
  6. Place on parchment paper to set for another 30 minutes before serving.
