  • 1 medium head cauliflower, cut into florets
  • 1 (15-ounce) can pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup grated Gruyere cheese
  • 2 cloves garlic, minced
  • Olive oil, salt, pepper, and spices (sage, thyme, nutmeg)

  1. Preheat your oven to 400°F (200°C).
  2. Steam or boil cauliflower florets for 5-10 minutes until tender-crisp.
  3. In a saucepan over medium heat, warm olive oil and sauté garlic until fragrant.
  4. Stir in pumpkin puree, heavy cream, and vegetable broth; whisk until smooth.
  5. Add Parmesan cheese, Gruyere cheese, sage, thyme, nutmeg, salt, and pepper; mix well.
  6. Simmer sauce for 5-7 minutes until slightly thickened.
  7. Grease a baking dish with olive oil; layer the cauliflower on the bottom.
  8. Pour the pumpkin cream sauce over the cauliflower.
  9. Top with remaining cheeses and breadcrumbs if desired.
  10. Bake for 20-25 minutes until bubbly and golden brown.
  11. Let cool for a few minutes before serving.
