  • 1 medium head cauliflower, cut into florets
  • 1 (15 ounce) can pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup grated Gruyere cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Spices: sage, thyme, nutmeg, salt, and pepper
  • Optional: 1/4 cup breadcrumbs for topping

  1. Preheat your oven to 400°F (200°C).
  2. Steam or boil cauliflower florets for about 5-10 minutes until tender-crisp. Drain well.
  3. In a medium saucepan over medium heat, add olive oil and minced garlic; sauté for about 1 minute.
  4. Stir in pumpkin puree, heavy cream, and vegetable broth; whisk until smooth.
  5. Add Parmesan cheese, Gruyere cheese, sage, thyme, nutmeg, salt, and pepper; stir to combine.
  6. Simmer sauce for about 5-7 minutes until thickened slightly.
  7. Grease a baking dish and layer the cauliflower florets evenly.
  8. Pour the pumpkin cream sauce over the cauliflower.
  9. Top with remaining cheeses and optional breadcrumbs.
  10. Bake for 20-25 minutes until bubbly and golden brown.
  11. Allow to cool for a few minutes before serving.
