  1. In a large bowl, mix whole wheat flour, protein powder, sugar, and baking powder.
  2. Add applesauce, oil, and vanilla extract; mix into a cohesive dough.
  3. Chill the dough for at least 30 minutes.
  4. Preheat oven to 375°F (190°C) and roll out chilled dough to ⅛-inch thick.
  5. Cut the dough into rectangles (3×4 inches); place half on a parchment-lined baking sheet.
  6. Spoon strawberry jam onto each rectangle, leaving a border. Top with remaining rectangles and seal edges.
  7. Bake for 18-22 minutes until golden brown; cool on a wire rack before glazing.
