  • Yukon Gold potatoes

  • All-purpose flour

  1. In a large pot, heat olive oil over medium heat and brown the sliced sausage for 5-7 minutes.
  2. Add chopped onion and sauté until translucent (5-7 minutes), then mix in minced garlic for an additional minute.
  3. Pour in chicken broth and water; stir to combine.
  4. Add cubed potatoes along with dried thyme, rosemary, and optional red pepper flakes; bring to a boil.
  5. Reduce heat and simmer covered for 15-20 minutes until potatoes are tender.
  6. For added creaminess, mash some of the potatoes against the pot's side.
  7. In a small bowl, whisk together heavy cream, milk, and flour; add to the pot while stirring constantly.
  8. Return the sausage to the chowder; simmer for another 5-7 minutes until thickened to your liking.
  9. Season with salt and pepper before serving.
