  • Yellow onion
  • Garlic
  • Chicken broth
  • Yukon Gold potatoes
  • Heavy cream
  • Milk
  • All-purpose flour
  • Dried thyme and rosemary

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced sausage and brown for 5–7 minutes.
  2. Stir in chopped onion and cook until translucent, about 5–7 minutes.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Pour in chicken broth and water; stir to combine.
  5. Add cubed potatoes, thyme, rosemary, and optional red pepper flakes; bring to a boil.
  6. Reduce heat, cover, and simmer for 15–20 minutes until potatoes are tender.
  7. For creaminess, mash some cooked potatoes against the pot's side.
  8. In a separate bowl, whisk heavy cream, milk, and flour to create a slurry.
  9. Slowly add slurry to the pot while stirring to prevent lumps.
  10. Return browned sausage to the pot; stir well.
  11. Simmer for an additional 5–7 minutes; adjust seasoning with salt and pepper as desired.
  12. Serve hot, garnished with parsley and cheese if desired.
