  • 1 cup fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pine nuts (or walnuts)
  • 2 cloves garlic
  • 1/2 cup extra virgin olive oil
  • 8 slices of your favorite bread (sourdough recommended)
  • 1/2 cup mayonnaise
  • 8 slices of your favorite cheese (provolone and mozzarella suggested)
  • 2 tablespoons softened butter
  • Instructions for Preparation:

Instructions

  1. Prepare the pesto by blending fresh basil, Parmesan, nuts, garlic, olive oil, salt, and pepper in a food processor until smooth.
  2. Spread mayonnaise on one side of four bread slices. On the opposite side, spread pesto generously.
  3. Layer with two slices of cheese on each slice of bread, then top with the remaining slices mayo-side up.
  4. Butter the outside of each sandwich and heat a skillet over medium heat.
  5. Cook each sandwich for about 3-4 minutes per side until golden brown and cheese is melted.
  6. Allow to rest for 1-2 minutes before slicing and serving.
