  2. In another bowl, cream together softened butter and sugars until fluffy.
  3. Beat in the egg and vanilla extract until combined.
  4. Mix in pumpkin puree.
  5. Gradually add dry ingredients to wet ingredients until just combined; fold in pecans.
  6. Divide dough into discs, wrap in plastic wrap, and refrigerate for at least 2 hours.
  7. Preheat oven to 350°F (175°C) and roll out dough on a floured surface to about 1/4-inch thickness; cut shapes with cookie cutters.
  8. Bake cookies for 8-10 minutes until edges are lightly golden; cool on wire racks before decorating.
