  • 2 tablespoons extra virgin olive oil
  • 1 large yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 8 ounces cremini mushrooms, sliced
  • 14.5 ounce can diced tomatoes (undrained)
  • 4 cups vegetable broth (or chicken broth)
  • 1 teaspoon dried oregano
  • 1 cup frozen peas
  • 1/2 cup grated Parmesan cheese

  1. Chop the onion, mince the garlic, and dice the bell peppers and mushrooms.
  2. Heat olive oil in a large pot over medium heat; sauté onion until softened (5-7 minutes).
  3. Add garlic and bell peppers; cook until fragrant (2-3 minutes).
  4. Stir in mushrooms; sauté until browned (5-7 minutes).
  5. Add tomatoes and broth; mix well.
  6. Season with oregano, salt, and pepper; bring to a simmer.
  7. Fold in orzo; cover and let simmer for 15-20 minutes until tender.
  8. Stir in peas and Parmesan; cook for an additional 2-3 minutes.
  9. Garnish with parsley before serving.
