  • 1 large yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 8 ounces cremini mushrooms, sliced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups vegetable broth (or chicken broth)
  • 1 teaspoon dried oregano
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1 cup frozen peas
  • Fresh parsley for garnish

Instructions

  1. Chop the onion, mince the garlic, dice the bell peppers, and slice the mushrooms.
  2. Heat olive oil in a large pot over medium heat; add onion and sauté until softened (about 5–7 minutes).
  3. Stir in garlic and bell peppers; cook until fragrant (2–3 minutes).
  4. Add mushrooms; cook until browned (5–7 minutes).
  5. Pour in diced tomatoes and broth; bring to a simmer.
  6. Season with oregano, salt, pepper, and stir in orzo.
  7. Cover and simmer on low for about 15–20 minutes until the orzo is cooked through.
  8. Stir in frozen peas and Parmesan cheese until heated through.
  9. Garnish with fresh parsley before serving.
