  • Yellow onion
  • Garlic
  • Red pepper flakes (optional)
  • Crushed tomatoes
  • Diced tomatoes
  • Chicken stock
  • Penne pasta
  • Dried oregano
  • Dried basil
  • Salt and black pepper
  • Fresh spinach

  1. Prep your ingredients by dicing the onion and mincing the garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté the onion until translucent (5–7 minutes).
  3. Add garlic and red pepper flakes; cook until fragrant (30–60 seconds).
  4. Stir in crushed and diced tomatoes; simmer for 2–3 minutes.
  5. Pour in chicken stock and add penne pasta; press down to submerge.
  6. Bring to a boil, then reduce heat to simmer. Cover and cook for 10–15 minutes until pasta is al dente, stirring occasionally.
  7. Season with oregano, basil, salt, and pepper to taste.
  8. Fold in fresh spinach until wilted (1–2 minutes).
  9. Adjust seasonings as needed before serving.
