Prepare the pie crust by mixing flour and salt, cutting in cold butter until crumbly. Gradually add ice water until combined. Form into a disc, wrap in plastic, and chill for 30 minutes.
While chilling, mix the sliced apples with sugars, flour, spices, and lemon juice.
Preheat the oven to 375°F (190°C) and grease mini muffin tins.
Roll out the dough to about 1/8 inch thick and cut circles to fit the tins.
Press dough into the tins, fill with apple mixture, dot with butter, and brush tops with egg wash.
Bake for 20-25 minutes until golden brown and bubbly. Cool before serving.
