  • 1 cup unsalted butter, cold and cubed
  • 1/2 cup ice water
  • 6 medium apples, thinly sliced
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 tablespoons all-purpose flour
  • Spices: cinnamon, nutmeg, allspice
  • 1/4 cup lemon juice

  1. Prepare the pie crust by mixing flour and salt, cutting in cold butter until crumbly. Gradually add ice water until combined. Form into a disc, wrap in plastic, and chill for 30 minutes.
  2. While chilling, mix the sliced apples with sugars, flour, spices, and lemon juice.
  3. Preheat the oven to 375°F (190°C) and grease mini muffin tins.
  4. Roll out the dough to about 1/8 inch thick and cut circles to fit the tins.
  5. Press dough into the tins, fill with apple mixture, dot with butter, and brush tops with egg wash.
  6. Bake for 20-25 minutes until golden brown and bubbly. Cool before serving.
