  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 12 jalapeños (seeded and minced)
  • 1 lime (juiced)
  • Salt and pepper to taste

  1. Preheat the grill to medium-high heat. Brush corn with olive oil and grill for 15-20 minutes until slightly charred.
  2. In a bowl, whisk together mayonnaise, sour cream, cotija cheese, cilantro, jalapeños, lime juice, chili powder, smoked paprika, salt, and pepper.
  3. Cut the grilled corn kernels from the cobs and add them to the dressing mixture.
  4. Toss gently until well combined. Adjust seasonings if necessary.
  5. Serve immediately or chill for 30 minutes before serving.
