  • Corn

  • Chili powder, cumin, cayenne pepper, smoked paprika, oregano
  • Beef broth
  • Fresh cilantro

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned (about 8-10 minutes). Remove and set aside.
  2. In the same skillet, sauté chopped onion until softened (about 5 minutes), then add minced garlic and cook for 1 more minute.
  3. Stir in chili powder, cumin, cayenne pepper (if using), smoked paprika, oregano, salt, and black pepper to toast the spices briefly.
  4. Add diced tomatoes (with juice), black beans, corn, green chilies (with liquid), and pour in beef broth while scraping the bottom of the pan.
  5. Return the browned beef to the skillet. Bring to a simmer and cover; cook on low heat for 15-20 minutes until slightly thickened.
  6. Adjust seasoning as needed and finish with chopped cilantro before serving.
