Ingredients

  • Olive oil
  • Chopped onion
  • Minced garlic
  • Ground beef (or turkey/chicken)
  • Diced tomatoes
  • Black beans
  • Corn
  • Diced green chilies
  • Chili powder, cumin, cayenne pepper, smoked paprika, oregano, salt, black pepper
  • Beef broth
  • Chopped cilantro (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Brown the ground beef for 8–10 minutes; remove and set aside.
  2. Sauté chopped onion for 5 minutes, then add minced garlic and cook until fragrant.
  3. Stir in spices (chili powder, cumin, cayenne pepper, smoked paprika, oregano, salt, black pepper) followed by diced tomatoes, black beans, corn, green chilies (with liquid), and beef broth.
  4. Return browned beef to the skillet. Bring to a simmer and reduce heat to low. Cover and cook for 15–20 minutes until thickened.
  5. Adjust seasoning if needed and finish with chopped cilantro before serving.
