  • 1 red onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 jalapeño pepper (optional)
  • 1 cup corn kernels
  • 1 can black beans
  • Fresh cilantro
  • Lime juice
  • Olive oil

  1. Dice the avocados and place them in a large bowl.
  2. Chop the red onion, red bell pepper, yellow bell pepper, and jalapeño (if using) and add to the bowl.
  3. Stir in the corn kernels and rinsed black beans.
  4. Add chopped cilantro for freshness.
  5. In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, garlic powder, salt, and black pepper.
  6. Pour the dressing over the salad mixture and gently toss to combine.
  7. Chill for at least 30 minutes before serving.
