  • 1 yellow bell pepper
  • 1 jalapeño pepper (optional)
  • 1 cup corn kernels
  • 1 (15-ounce) can black beans
  • 1/2 cup fresh cilantro
  • For dressing: lime juice, olive oil, cumin, chili powder, garlic powder, salt, and black pepper

  3. Finely chop the red onion and add it to the bowl.
  4. Dice the red and yellow bell peppers; add to the mixture.
  5. If using, mince the jalapeño and add it along with corn kernels and rinsed black beans.
  6. Chop fresh cilantro and sprinkle over the mixture.
  7. In a separate bowl, whisk together lime juice, olive oil, cumin, chili powder, garlic powder, salt, and black pepper; pour over the salad.
  8. Gently toss until well coated; chill for about 30 minutes if desired before serving.
